Why make grilled snapper with orange salad?
Snapper is one of the most versatile and flavourful white fish available in Australia — its firm, sweet flesh holds up beautifully on a grill and the skin crisps to a golden crunch when cooked skin-side down first over medium heat. Cutting the fillets diagonally in half creates elegant, serving-ready pieces that look refined on the plate.
The combination of orange, mint and white balsamic vinegar in the dressing is the element that makes this salad truly memorable. The orange provides natural citrus sweetness, the white balsamic adds a gentle tang without the deep colour of regular balsamic, and the fresh mint lifts everything with a cool, herby brightness. Together they create a dressing that is sophisticated yet completely effortless to make.
Ingredients (serves 4)
Servings4
Orange and mint dressing
- 2 oranges
- 1 small red onion, finely chopped
- 1 tbsp white balsamic vinegar
- 1 tbsp extra virgin olive oil
- 2 tbsp fresh mint, finely chopped (plus ½ cup extra mint leaves for salad)
Grilled snapper and salad
- 4 snapper fillets (150g each), skin on, halved diagonally
- 2 bunches asparagus, trimmed
- 150 g frozen peas
- 1 bunch watercress, leaves picked
To serve
- Micro herbs
Tip: When slicing the oranges over a bowl, you’ll catch all the juices for the dressing — don’t discard these. You only need 1 tablespoon for the dressing, so drink the rest as a little cook’s reward. The mint is used two ways — finely chopped in the dressing and as whole leaves in the salad for contrasting texture.
How to make grilled snapper, asparagus and orange salad
Step 1: Prepare the oranges and make the dressing
Peel the oranges and thinly slice into rounds over a small bowl to catch the juices. Reserve 1 tablespoon of juice. Combine the red onion, white balsamic vinegar, olive oil, chopped mint and reserved orange juice in a bowl. Season with salt and pepper and set aside.
Step 2: Grill the snapper and asparagus
Preheat a barbecue grill or chargrill pan over medium heat. Lightly spray the snapper and asparagus with olive oil spray. Cook the snapper skin-side down for 1 to 2 minutes or until the skin is crisp. Turn and cook for a further 2 minutes or until cooked through. Transfer to a plate.
Cook the asparagus, turning, for 1 to 2 minutes each side or until just tender.
Step 3: Cook the peas
Meanwhile, cook the frozen peas in a small saucepan of boiling water for 2 minutes or until tender. Refresh under cold running water and drain well.
Step 4: Assemble and serve
Arrange the asparagus, peas, watercress and orange rounds on serving plates. Scatter with extra mint leaves. Top with the grilled snapper pieces, drizzle with the orange and mint dressing and scatter with micro herbs. Serve immediately.
Tips for best results
- Start the snapper skin-side down — this is what crisps the skin and prevents curling
- Don’t move the fish once placed on the grill — let it release naturally before turning
- Use white balsamic rather than regular balsamic to keep the dressing light and pale so it doesn’t discolour the salad
- Slice the oranges directly over the bowl to capture all the juice for the dressing
- Refresh the peas under cold water immediately to stop them cooking and preserve their bright colour
- Assemble and dress the salad just before serving to keep the watercress crisp and fresh
